The Niçoise cuisine, a unique case along with Lyon, features the name of its city in its title: “Cuisine Nissarde, the respect for tradition”.

This designation, launched in 1998 at the initiative of UDOTSI (the Departmental Union of Tourist Offices and Initiative Syndicates) and the Niçoise tradition association La Capelina d’or, aimed to revitalize authentic Niçoise cuisine by making a memorial gesture.

Since 2014, this label has been managed by the Tourism and Convention Bureau from the Metropolitan Tourist Office Nice Côte d’Azur, which sought to give it a new impetus. The spirit has been preserved, and to ensure its continuity, a Technical Committee, regulations, and an evaluation grid were established.
During the first edition of the renewal, 17 restaurants received the label at an official ceremony.

This year, 32 establishments, from Nice and the region, mostly in the Metropolis, have been labeled in two distinct categories, “Restaurants” and “Merenda & Goustaroun” which means Snacks and takeaway sales.

A diploma and a plaque certifying it were presented to them by Jean-Luc Gagliolo, Deputy to the City of Nice.
