On Tuesday, March 8, 2011, the 4th edition of season 2 of “Toquissimes” took place (see Nice-Premium from March 3, 2011). For the 2nd consecutive year, Emmanuel Ruz, chef of the restaurant Lou Fassum in Grasse, created the menu for a gourmet lunch priced at 3 euros, which was then prepared by the university restaurant teams.
In addition to creating the menu on the theme “gentle restart,” Emmanuel Ruz gave a cooking class to the student winners of the “A vous la toque!” contest. โNext gourmet event on Thursday, April 7, 2011!
On the menu of the university restaurants: eggplant mille-feuille, tomatoes & country bread with pistou sauce, salmon surprise, spinach like a large ravioli, gorgonzola cream or veal medallion with tomato and citrus sauce, green risotto (creamy peas), and mascarpone with exotic fruit coulis, speculoos, cinnamon powder & bitter chocolate.
A “gentle restart” meal after this short week of vacation, which meets three criteria: rich in vitamin nutritional intake, low cost, and above all, delicious!
Florencia (student of applied foreign languages), Alexandra (student of communication information), Guillaume (medical student), and Joseph (student of applied foreign languages) won the “A vous la toque!” contest allowing them to win a cooking class at the university restaurant of Carlone (U.F.R of Letters) on the day of Toquissimes. Their mission was to prepare the dessert alongside starred chef Emmanuel Ruz. They began their preparation under the watchful eye of Emmanuel Ruz, who shared his tips with them to achieve a perfect dessert, both in taste and appearance!
