This Thursday, the healthcare and supervisory staff of the Saint Antoine Clinic in Nice, led by Mrs. Ludivine Schang, were able to enjoy an exceptional meal, an initiative by the clinic’s management, to thank them for their availability and unwavering commitment during this particularly challenging period we have just been through, to fight against the health crisis.
It was a close collaboration between the very talented chef from the Cรดte d’Azur, Julien Perrier, and the expertise of the young Hannan and the team from SODEXO led by Mr. Dominique Soulaques, which made it possible to enhance the fresh and seasonal products provided by the partners of this meal, largely sourced from the Nice wholesale market MIN. Indeed, it was the mobilization and generosity of the companies MATIMPEX for fruits and vegetables, the Reynaud R&O house for fresh fish, the LE BORVO company for salmon, as well as the young Nice company ARTIGIANO led by Olivier MAXIMIN, whose parmesan-based products flavored with porcini mushrooms, basil, or tomato, advantageously complemented the fifty dishes served to the guests present. To round off this festive moment, a raffle was organized, with a jersey signed by the players of OGC NICE up for grabs!
An exceptional menu composed as a starter of smoked salmon heart cubes from the famous Burgundian house LE BORVO, saffron tarama, and pickled red onions with dill, followed by a choice of an organic sea bream fillet from Reynaud R&O Seafood Gastronomy, accompanied by an assortment of Nice zucchinis and fennel, provided by MATIMPEX at the Nice wholesale market, with a pomegranate virgin sauce, sprinkled with basil parmesan from the Nice house Artigiano, or roasted veal accompanied by young carrots sautรฉed with cumin and fresh piperade provided by MATIMPEX at the Nice wholesale market, and cep parmesan from the house Artigiano. To end this delicious meal, for dessert, a succulent crumble with fresh red fruits and mascarpone cream with tonka bean was served.
To organize this festive day, the Saint Antoine Clinic called upon the Nice company My Perfect Link, the catalyst of positive energies, and relied on the expertise of Angรฉlique and her team. My Perfect Link, which specializes, among other things, in organizing charitable events, but also events more specifically for companies or other entities, coordinated the implementation and organization of this meal.
