Pastry chef of the Majestic Barrière in Cannes, Michael Durieux enchants us with his signature dessert, the Babette.


An avalanche of exoticism for the connoisseurs! And I can tell you, the serving is indeed generous.

On the base of the plate: a well-set yogurt panna cotta adorned with fresh and indulgent delights: exotic compote, a few coconut macarons, diced mango refreshed with lime, an orange espuma, accompanied by a matching sorbet, a crispy tuile, a few flower petals for a touch of poetry…

I loved these combinations of textures and flavors that pleasantly extend a meal, and I highly recommend this lovely, aesthetic, flavorful, and zesty dessert as I like them. While you’re at it, you can also enhance your experience with a wine chosen by the head sommelier Guerrick Baray, or a coffee selected by the head barista at Malongo.

NB: From February 11th to March 10th, the hotel will be closed (annual closure). Le Fouquet’s is taking this opportunity to get a makeover. Enjoying the “Babette” in a renewed setting could be a reason for an outing.
