In a packed room, the Federation of Master Bakers and Bakery-Pastry Chefs of the Alpes Maritimes cut the galette to celebrate the New Year. On this occasion, the Mayor of Nice, Christian Estrosi, was present alongside them.

The President of the Federation of Master Bakers and Bakery-Pastry Chefs of the Alpes Maritimes, Claude Batel, speaks. After thanking the artisans present by his side, the president recalls the importance of Epiphany in their profession.
“Today, the galette was prepared by Xavier Noto, bakery-pastry chef at the Moulin de Flore in Nice,” announces the president. A galette with candied fruits of one meter in diameter.
For his part, Mayor Christian Estrosi extends his wishes to a profession he deems essential in France. “Today, bakeries are part of the history of neighborhoods. The baguette has gone around the world,” the mayor recalls.
A Challenging Profession
Today, there are 400 bakeries in the Alpes Maritimes employing 3,000 staff and apprentices. Christian Estrosi remarks, “It is an important component of our azure economy.”
“The profession of baker is challenging. It is a demanding pace, difficult hours. There are demands. This is why we must support these artisans,” the mayor reminds.
To reinforce his point, the former Minister of Industry does not hesitate to throw a few jabs at the current government. “Today, we’re adding administrative complexities for bakers. We need to free them instead of tying them down,” he argues.
For this reason, Christian Estrosi hopes that the year 2015 will be marked by awareness: “Bakers-pastry chefs embody our model of civilization,” concludes the mayor as he cuts the first piece of the galette alongside Claude Batel.
