Epiphany: in the Alpes-Maritimes, there is a commitment to uphold the tradition

Every year on January 6th, we celebrate Epiphany, a celebration with religious origins now mostly known as the day when we eat the “galette des rois” (king cake).


Almond cream galette or brioche crown, everyone has their preference for this tradition. While more than 80% of galettes des rois are industrially produced, artisan pastry chefs in the Alpes-Maritimes are committed to adhering to a charter that guarantees quality and authenticity.

Presided by Christian Cottard, pastry chef from Antibes, the Union of Artisan Pastry Chefs and Chocolatiers of the Alpes-Maritimes launched the “Galette des Rois Charter” in 2019. It mandates that artisans produce all of their galettes and crowns using only “initial and first-quality” products.

Epiphany according to the LAC House

Not all bakeries in the Alpes-Maritimes offering artisanal galettes des rois have joined the charter, as is the case with Maison LAC. A true institution in Nice, it has been offering quality chocolates and pastries since 1995 in its five Nice boutiques.

This Tuesday, January 11, it inaugurated its latest store at CAP 3000 and organized a tasting of its various galettes des rois, each more delicious than the last.

Traditional galette, chocolate, tatin style, pistachio/raspberry… All these galettes are offered by LAC pastries from January 2 to 31 and are committed to using quality products. “We have an absolute level of requirement for the quality of our products. We are convinced that they can only be created with the best ingredients,” says Maison LAC.

For those lucky enough to find the “fève” (a small charm hidden inside), they will get a glimpse of the carnival floats. The house has indeed created a collection of seven charms, in association with the Nice Carnival, each representing a float from the 2022 Nice Carnival edition, the theme of which will be “the king of animals.”
