During the Gastronomy Day – Taste of France, Christian Estrosi announced the creation of the Niçoise School of Flavors to defend nutritional balance and promote Niçoise cuisine.
This new structure, which will be named the “House of Niçoise Cuisine,” will host Niçoise cooking workshops, exhibitions, and conferences related to Niçoise cuisine.
The project will materialize with an opening in 2019 in the former Senate of Nice, which has been home to the Heritage Center for the past two years.
Yesterday marked the first edition of the Gastronomy Festival in Nice, under the theme “Taste in All Its Senses.” It is part of the National Gastronomy Festival – Taste of France, whose goal is to promote gastronomy and its talents across all territories.
Throughout the day, 15 Michelin-starred chefs or Master restaurateurs and about ten pastry chefs offered savory and sweet tasting plates.
Farmers, bakers, and butchers were also present to offer spit-roasted beef, baskets of fruits and vegetables, and many other surprises, with products sourced from short supply chains.
All proceeds will be donated to the Alpes-Maritimes Cancer League, which is celebrating its 100th anniversary this year.
“Gastronomy is part of our cultural heritage,” affirmed the mayor of Nice, Christian Estrosi, during his stroll with economic stakeholders.

Local agriculture, which ensures respect for production methods and the quality of finished products, consists of:
– 64 farms labeled “organic agriculture,”
– 13 farms labeled “AOP Olives of Nice,”
– 21 farms labeled “AOP Olive Oils of Nice,”
– 11 farms labeled “AOP Wines of Bellet,”
– numerous labeled honeys and apicultural products,
– collective brands like the Tome de la Vésubie or products from the Tinée.
The simple cooking of fishermen and Niçoise origins includes 29 establishments labeled “Master Restaurateur,” 2 Michelin-starred restaurants, and 2 double Michelin-starred restaurants.
