The CROUS of Nice-Toulon and La Recette Magique are renewing their partnership for the 2010/2011 academic year to introduce students to gastronomy in university restaurants. This Thursday, April 7, 2011, will mark the 5th edition of season 2 of “Les Toquissimes,” featuring David Faure!

-David Faure, chef of the restaurant Aphrodite in Nice, has created the menu which will be executed by the teams of the university restaurants that day.
The gastronomic lunch (starter, main course, dessert) is offered to students at the price of 3 euros, which is the cost of a university restaurant ticket.
In addition to creating the menu on the theme “Beauty Food,” David Faure will give a cooking class to the students who won the “A vous la toque!” contest at the Montebello university restaurant.

Starter: Pumpkin veloutรฉ with mussels & crunchy white cabbage with pistou
Main Course: Salmon steak and chicken jus with coconut for a dice of vegetables and lemon mashed potato or Slice of lamb leg & sliced jus with oregano, stewed carrots with flat parsley & polenta with black olives
Dessert: Red fruits and pineapple with fennel seed like a vanilla panna cotta, tea jelly & hazelnut crumble
