For this third recipe, the spotlight is on the Nice-style cake with orange and almonds.
Serves 6:

Ingredients:
50g of flour
2 eggs
2 egg yolks
Icing sugar
125g of butter
125g of granulated sugar
100g of candied orange peel
Sliced almonds
5 cl of Grand Marnier
125g of almond powder
2 puff pastry sheets of 200g each
Preparation
STEP 1
Preheat the oven to 180°C (350°F).
Butter the cake pan. Line the pan with the first sheet of puff pastry, pressing it well against the sides, leaving 2 cm of dough hanging over the edge of the pan.
STEP 2
In a bowl, soften the butter into a cream, add the sugar and almond powder, mix well then incorporate the 2 eggs + 1 yolk, with the 50g of flour, the candied orange peel cut into small cubes about 100g, as well as the 5 cl of Grand Marnier.
STEP 3
Fill the pastry with this almond cream. Unroll the second sheet of puff pastry, and cover the cake, folding over the edges of the pastry.
Brush the pastry with the egg yolk, and sprinkle the cake with some sliced almonds.
STEP 4
Bake at 180°C (350°F) for about 35 minutes, keeping an eye on it.
STEP 5
Once the Nice-style cake is cooked, sprinkle with icing sugar and place a few strips of candied orange peel in the center.
