Niçoise cuisine celebrates its week of taste.

As part of the Taste Week, three sessions will be organized: Monday, October 14, at the Lu Fran Calin Restaurant with students from the specialized school of Château, and then on Friday, October 18, in two schools in Nice (Terra Amata primary and Papon preschool). The program includes the discovery of the four tastes: bitter, sour, sweet, and salty, a presentation of Niçoise cuisine, and finally, the preparation and tasting of a sweet pan bagnat by all the students.

Two of these sessions will be led by Franck Viano, winner of the Côte d’Azur edition of the TV show “Un dîner presque parfait” and a member of the technical committee for the “Cuisine Nissarde” label. In the morning from 9 to 11 AM, the CE1 and CE2 classes from Terra Amata school will get hands-on, while in the afternoon from 2 to 4 PM, it will be the younger children from the two classes of the Papon preschool who will become “little chefs for a day.”

“It’s important to share our love for Niçoise cuisine with the children because they will be our ambassadors tomorrow. And who knows, some of them might become the Michelin-starred chefs of the future, and others their discerning clientele.” Franck Viano didn’t wait for his TV appearance to share his passion since he has been participating in Taste Week for about ten years with his friend and partner, Daniel Silvetti, chef at the Lu Fran Calin restaurant, who will host students from the specialized Château school (visually impaired) on Monday, October 14 in the morning, accompanied by Maître Glacier Pierre Veyrat from Gelateria Azzuro. “This year, things didn’t work out for us to do it together with Franck, but looking on the bright side, we’ll reach many more children through our actions. And we have many years ahead of us to give back to Niçoise cuisine what it has given us,” says the chef from Nice, who has always been present for this type of request for many years.

Three wonderful initiatives that are part of the “Cuisine Nissarde” label, managed like a “chef” by the Tourist Office and its dynamic director, Denis Zanon, with both protagonists being part of the technical committee. These three sessions will also pay tribute to the remarkable work of the association “La Capelina d’Or” and its late president, Renée Graglia.
