It is over a few Niçoise specialties that the two companions in this adventure, who wished to remain anonymous, revealed their project regarding Niçoise cuisine: To have it recognized as part of UNESCO’s Intangible Cultural Heritage. A bet that is not as crazy as it sounds…


“We had been thinking about it for a while, and since the deadline for applications is set for March 31, we decided to take the plunge,” explains one of the two protagonists, who is well-known in the Niçoise culinary scene. “It’s not for publicity, and that’s why we want to remain anonymous, but because we genuinely believe that Niçoise Cuisine deserves a place, just like French Cuisine, within this prestigious institution.”

But the path will be long for the two applicants because, after the request for preparatory assistance for the development of the application files, a year of work will be needed before submitting the application, with a response that could come within two years of the application.

“What we want is for Niçoise Cuisine to be protected and for us to be able to intervene if it is debased or misappropriated. Who hasn’t seen in a supermarket a Niçoise salad with, at best, green beans and potatoes, and at worst, corn and hearts of palm? Today, there is no way to stop this.” A warning without consequences for those who violate Niçoise traditions.

After the Promenade des Anglais, which is aiming for its entry into the UNESCO World Heritage, it might be Niçoise Cuisine that could join it to form a perfect duo!
