This Tuesday starting at 8 a.m. at the restaurant La Bonne Etape, the regional finals of the 2018 Talents Gourmands will take place.
Franck Viano will represent the Collectif Cuisine Niçoise in the “Cooks” category, competing against three other chefs. A two-hour contest with a dish of choice will determine the grand final winner. Two other categories are on the program: Artisans and Farmers.
For this final, it is a variation on Niçoise cuisine that will be proposed by Franck Viano, who will create a duo composed of a traditional Pan Bagnat and his famous “Pan Fruchat,” a fruity version of the famous Niçoise recipe. The idea is to promote both an ancestral recipe by explaining its origin and history, while also showing that it can be the basis of a new creation used particularly in Niçoise cooking workshops in schools, nurseries, and Niçoise nursing homes (just as the Macaron Tourte de Blettes or the Niçoise Salad Mille-feuille can be).
Another finalist from Nice will be Julie Vidal (Quosentis), who will present her activity in the artisan category.
