And the festivities began 30 years ago. Thirty years since Castellaras has been shining a light on gastronomy and its treasures on the heights of Fayence. What a beautiful anniversary this is! But the anniversary of Castellaras is above all that of a family, that of Alain Carro and his wife, who founded what would become a remarkable and renowned establishment, even earning a star, and whose daughter Hermance, along with her husband Quentin Joplet, continue to make it shine with flair.
Here, time seems to fade away, giving way simply to pleasure. The pleasure of discovering this magnificent place perfectly integrated into its environment, with an architecture that is both gentle and strong. The pleasure also of being carried away by the Provençal atmosphere that exudes from the stone walls, and by the warmth of a home shared momentarily with the masters of the house.
Hermance readily tells how, in the beautiful room where menu books are displayed on one side and family photos on the beautiful solid wood table, her bed used to be when she was a little girl. Today, the curious and passionate little girl has transformed into a chef attentive to the smallest detail, who supports her husband with love and kindness.
Here, time has not stopped; it simply found its place. An anniversary means friends, old ones, new ones, sometimes they are the same, after all. These friends come from time to time, spend time, take their time. Because at Castellaras, time is taken. Simply, naturally. Time to appreciate the place, time to taste, to savor, to relax.
