The Cuisine Nissarde Label for Deserving Restaurateurs

Last night, in the honor hall of the Nice Tourist Office, Niçoise cuisine was celebrated with the awarding of the first “Cuisine Nissarde” labels to the restaurateurs who applied for it.


cuisine_issarde_groupe.jpg And for those who know Niçoise cuisine, there was quite a gathering per square meter, yesterday, with the greatest names in local gastronomy coming to receive the highly coveted prize. This proves that just because one runs an already well-known “business,” it doesn’t mean one won’t apply for a label that elevates the values of one of the jewels of Nice’s heritage.

“I already had the old label, which was given at the time by the Cercle de la Capelina d’or of Mrs. Graglia, but I am proud to have again achieved the new one, which, in my opinion, imposes good rules so that our customers are certain to find quality cuisine steeped in tradition.” Comments Daniel Silvetti of the restaurant Lu Fran Calin, displaying the metal plaque, symbolizing the labeling of his establishment.

Thus, there are 17 restaurants that, starting today, are stamped “Cuisine Nissarde,” and a new series of labeling will begin this week with already a dozen applications received at the Tourist Office. The Technical Committee composed of chefs, cooking professors, and specialists in both Niçoise cuisine and heritage will have its work cut out for them, or at least some stuffed vegetables, pissaladière, and gnocchi to taste.

It is thus from the hands of the Mayor of Nice, Christian Estrosi, and his Tourism Deputy, Rudy Salles, that these new label recipients received their metal plaque but also a USB drive containing all the label’s recipes and its official logo to display on their menu.
