The “Cuisine Nissarde” label is expanding the number of its certified restaurants.

Niçoise cuisine, along with Lyon, is unique in having the name of its city in its designation: “Cuisine Nissarde, respecting tradition.” This designation, launched in 1998 at the initiative of the UDOTSI* and the Niçoise tradition association La Capelina d’Or, aimed to revitalize authentic Niçoise cuisine by acknowledging its history.


The “Cuisine Nissarde” label is awarded to restaurateurs who work to promote Niçoise cuisine by committing to respecting recipes, ensuring the quality of products and raw materials used, providing quality customer service and information, and complying with hygiene and safety regulations.

During the first edition of this renewal, 17 restaurants received the label.

This year, 33 establishments, from Nice and the surrounding Metropolitan area, were certified for two years during an official ceremony in two distinct categories: “Restaurants” and “Merenda & Goustaroun,” which means snacks and take-out.

A plaque certifying this is displayed at the entrance of each establishment, allowing visitors and customers to be informed.

Niçoise cuisine has been part of the “national intangible heritage” since 2019. An application has been submitted to UNESCO for worldwide recognition.
