### The Delicious Dishes of Cyril Breteau

Chef Cyril Breteau took over the helm at restaurant Le Siècle a few months ago. Previously, he worked in other prestigious establishments such as the Miramar Beach Hotel in Théoule-sur-Mer and the Grand Hotel in Oslo. He has also been a private chef and an organic caterer.

His specialty is reinventing Mediterranean cuisine. The menu navigates between sea specialties and authentic French recipes to offer healthy and local cuisine, not to mention the signature flambéed dishes that provide an impressive spectacle and delight guests.

A pioneer of cuisine using organic agriculture, the chef, nicknamed “BioMan,” masterfully cooks the finest products nature has to offer. At the Hôtel West End, edible flowers grow in a rooftop garden, ready to enhance your dishes.

You’ll be equally charmed by their starters as by their selection of meats and fish.

Organic salad with parmesan shavings and spring onion oil, semi-cooked yellowtail with rocket emulsion and ginger sauce, seared scallops with granny smith apples, spinach, and blackberries, bottarga and vinaigrette, or slow-cooked lamb shank accompanied by sautéed seasonal vegetables.
