Distinction between AOC and PDO
We were familiar with the AOC (Appellation d’Origine Contrôlée), which is a guarantee of quality for French products. The AOC identifies a product, its authenticity, or the typicality of its geographical origin. As for the PDO label (Protected Designation of Origin), it signifies the quality of European products. It protects the name of a product whose production, transformation, and development must take place in a specific geographical area with recognized and established expertise.
