On Sunday, June 1st, at 10 AM, on Cours Saleya in Nice, the JCE will create a sort of happening on the theme of food waste. The numbers are there, the facts too, and we are all witnesses every day to the waste resulting from our consumption of fruits, bread, dairy products, whether we are at restaurants, fast or slow food, or in our own kitchens, not to mention expiration dates.
In collaboration with renowned partners, the chefs of the Toques Brûlées led by David Faure, the Young Economic Chamber of Nice Côte d’Azur will organize a unique culinary show & tasting. This event will be public and open to everyone. The Toques Brûlées will breathe new life into damaged and wilted products. Set up at Cours Saleya on Place Pierre Gautier – the Producers Square – the chefs, assisted by their staff, will use their talent to create delicious dishes from these discarded raw materials. The public will have the opportunity to taste original and, shall we say, inexpensive recipes. Everyone will also have the chance to take home these cooking secrets. The goal is to demonstrate that it is possible to reduce food wastage.
Students in the field of hospitality will have the opportunity to participate in an internship and assist the chefs in preparing the dishes, while JCE volunteers will raise awareness among passersby and spectators on the subject, notably by distributing flyers.
This action, which is directly part of the European awareness of the necessary fight against food waste, is supported by the Chamber of Agriculture, the City of Nice, and the regional headquarters of Banque Populaire Côte d’Azur.
Implicitly, this operation raises the issue of the practice of doggy bags in the restaurant sector, which is struggling to become common here. Another sensitive topic is the European standards that give no chance to products that do not fit the mold and never reach the shelves of large and medium-sized stores. As for the discomfort that food waste can represent while part of the world suffers from malnutrition and hunger, it cannot leave anyone indifferent.
