“The Toquissimes”: Top Chefs in University Restaurants in Nice

This Tuesday, March 8, 2011, marks the 4th edition of season 2 of the “Toquissimes,” with Emmanuel Ruz! In addition to creating the menu with the theme “Return with Ease,” Emmanuel Ruz will give a cooking class to students who won the “A vous la toque!” contest.


toquissimes.jpg The Nice-Toulon CROUS and La Recette Magique are renewing their partnership for the 2010/2011 academic year, to introduce students to gastronomy in university restaurants.

Emmanuel Ruz, chef of the restaurant Lou Fassum in Grasse, has created the menu that will be prepared by the university restaurant teams that day.

The gastronomic lunch (starter, main course, dessert) is offered to students at the price of 3 euros, equivalent to a university restaurant ticket.

Thematic Menu: Return with Ease

Starter: Eggplant mille-feuille, tomatoes & country bread with pesto sauce

Main Course: Salmon surprise, spinach like a large ravioli, gorgonzola cream or Veal medallion with citrus tomato sauce, green risotto (creamy pea puree)

Dessert: Mascarpone on exotic fruit coulis, speculoos, cinnamon powder & bitter chocolate
