Initially created by the association “La Capelina dโOr” and its late president, Renรฉe Graglia, the “Cuisine Nissarde” label is making a comeback under the aegis of the Nice Tourism and Convention Bureau, which has taken over its management in recent months, injecting new energy through its new technical committee composed of chefs and enthusiasts of Niรงoise cuisine.
And it deserves it, this Niรงoise cuisine that has traveled the world many times with its traditional salad, but also its pissaladiรจre, Swiss chard pie, stuffed vegetables, and ganses. It is precisely to protect this jewel of Niรงoise heritage that the “Cuisine Nissarde” label sits at the table with already labeled restaurants but especially with those wishing to earn it.
Throughout the summer, the label’s technical committee studied the label’s old recipes, incorporating new ones like Niรงoise rabbit, bagna cauda, fish soup, and merda di can. In a few days, labeled restaurateurs will receive a letter in advance of a visit from one of the technical committee members who will ensure that the establishment still meets the label’s charter criteria. For those wishing to be labeled, they will also receive a letter explaining the application process for label certification.
To do this, the restaurateur must apply to the OTC Nice and subsequently adhere to the label’s charter, which focuses on respecting the recipes, the quality of the products, knowledge of history, respect for Niรงoise heritage, quality of reception and information, and compliance with hygiene and safety regulations. Following an inspection by members of the label’s technical committee, OTC Nice, in agreement with them, will inform the restaurateur of its decision and grant the label for a period of three years. They will then receive a communication kit (sticker, enameled plaque…) and must commit, at least once a year, to participate in promotional and animation operations on Niรงoise cuisine.
A commendable initiative to be hailed for the preservation and promotion of this Niรงoise cuisine, a jewel of heritage and a key asset of local tourism.
