# Pinot et Chardo: A Wine Cellar Full of Elegance in Nice’s Port District

**The authentic Place du Pin & Rue Bonaparte, in the Port district, continue to develop with elegance! Quality shops and craftsmen, varied restaurants, designer boutiques… make this place a unique address, full of charm to perfect the art of living there. A wine cellar where wines and champagnes are uncorked to create more festivities!**

**Dorian and Jonathan**, two great wine enthusiasts, created Pinot and Chardo just a year ago. Since its opening, wine lovers, neighborhood residents, and passing visitors have flocked there with enthusiasm and loyalty!

The boutique, with **700 references**, seduces both through the richness of its selection and its decoration. Its contemporary design blends the warmth of wood with the aestheticism of metal that showcases bottles as true viticultural treasures, inviting you to savor excellence with style!

Jonathan wanders through vineyards, so it was Dorian who agreed to answer our questions:

## **Dorian, what was your background before opening Pinot and Chardo?**

*”Graduated from the Escoffier School, I completed my ‘sommelier’ training as an apprentice at the five-star Hotel Belles Rives in Juan-les-Pins, at the Michelin-starred restaurant La Passagère, which was a rich experience. I then continued my career in this **demanding world of haute gastronomie** alongside Philippe Chevrier in Geneva. Switzerland’s much higher purchasing power than France allowed me to serve between 200 and 300 bottles per day, and to taste exceptional wines such as La Romanée-Conti, considered the most prestigious and sought-after Burgundy estate in the world! Seeking lightness, I then joined Bombar, an iconic restaurant in the Geneva food scene, with Marc Popper. There I discovered a more convivial approach to the profession and took my first steps into the world of natural wines!”*

## **One year since opening! How did you experience launching your wine cellar, and where does the name Pinot et Chardo come from?**

*”**Passionate about wine, driven by a love of challenge, sharing, and entrepreneurship…** opening our own cellar was obvious: a dream that had been maturing for years! We built our stock by selling and delivering personalized boxes carefully prepared through social networks: for every six bottles purchased from a winery, we sold four; the remaining two became our first inventory!”*

*”It was Jonathan who came up with the shop’s name. Pinot and Chardo refer to **Pinot Noir** and **Chardonnay**, two of the world’s greatest grape varieties: a name that rhymes, is universal and easy to remember!”*

*”We fell in love with the location and the neighborhood: the **Little Marais of Nice**, warm and lively! A year of discovery and learning the merchant trade, and a year of sharing, convivial moments and advice to our customers!”*

## **What selection can you discover in your wine cellar?**

*”We offer more than 700 references, and nearly **3,000 bottles** are available for purchase! We work 99% with French wines: the richness of our terroirs is inspiring and we prioritize the great French regions! We highlight passionate winemakers, family estates, cuvées that tell a story and labeled wines. Our selection is the fruit of our past and current experiences — Jonathan is also commercial manager for the PACA region for Château La Coste estate — of our winery trips meeting with estates, our exchanges at gastronomic fairs and of course our true favorites!”*

## **How would you describe the ideal wine?**

*”For me, **the perfect wine is a precise and perfectly controlled wine, both digestible and harmonious**. Its texture is silky and enveloping. It’s a wine that provokes genuine emotion and naturally invites sharing. I’m particularly sensitive to the finesse, balance and elegance it reveals!”*

## **What are the most requested wines by your customers?**

*”**For young wines**, ready to be tasted, they turn to fresh and expressive profiles. The Chablis style seduces: a dry, lively and mineral wine, with beautiful tension, ideal for aperitifs or seafood. They also appreciate the rounder and more indulgent Chardonnay style, with buttery and brioche notes, offering an ample and comforting mouth.”*

***For aging wines**, to be aged, acidity, tannin (for reds), aromatic concentration, and balance are major characteristics.* I recommend wines like Domaine André (Anjou), Château Le Puy cuvée Barthélémy or Domaine du Banneret.”

## **What other gems can you discover in your wine cellar?**

*”We offer a refined selection of **champagnes (Pertois Moriset, Hugues Godmé, Henri Giraud…) spirits, digestifs and liqueurs** chosen with the same rigor (Gin de Provence, Chartreuse, L’Abricot, Alabat Armagnac, Tequila Azul, Whisky…). Alcohol-free beverages such as **sparkling and vegetable creations** of character, like Henri Marie cuvées or organic Tonics aged in oak barrels, a delight! To accompany sips, we offer **a fine grocery selection of premium products**: artisanal hot sauces, distinctive pâtés, exceptional olive oils, high-end jams… So many delicacies to enhance moments of sharing!”*

## **To experience other moments of sharing and conviviality, what do you offer?**

*”We organize **tasting workshops** around specific themes: discovering a winery, exploring a wine color or introducing a digestif. These moments are shared around gourmet platters such as cheese, charcuterie or seafood selected with neighborhood merchants!”*
