It is light and plentiful. Cotton candy emerges as the star treat at local festivals. And it is precisely its season. During the Carnival of Nice, this delicacy made a strong entry… as usual! Near the Ferris wheel or along the Promenade des Anglais, it attracts attention.
Its advantage: an enormous size like a basketball, and its color. Often candy-pink, sometimes blue or green, cotton candy has managed to allure all generations and withstand the test of time.
Its creation dates back to the Belle รpoque, during the 1900 World Fair. And it was a Frenchman who invented it. This has not prevented the product from spreading everywhere, including Japan. The same goes for across the Channel and across the Atlantic, where it is called “cotton candy.”
While the result is spectacular, the recipe is much less so. Only one ingredient is necessary: sugar. A crystallized sugar, worked with heat and at a certain speed. For this, a machine was necessary.
