In the colorful alleyways of Old Nice, the restaurant Le Panier, run by Chef Aurélien Martin and his wife Marie Lacoue, invites us on a surprising and memorable culinary journey. This lovely couple met in Geneva at the Hôtel Le Beau Rivage 5*. Aurélien, working as sous-chef with Dominique Gauthier, learned the discipline and craftsmanship of fine dining. Marie enriched her experience as a sommelier.

Globetrotters, their passion for discovering cuisines from elsewhere creates a richness of flavors on their plates. At our Nice couple’s venue, prepare to savor a fusion cuisine blending the Mediterranean with their Past Travels!

Chef Aurélien Martin is uncompromising in choosing his products. The quality and freshness of the dishes are essential to satisfy the epicurean and the pleasure of cooking! The fruits, vegetables, and spices are selected from our famous Cours Saleya Market, while the fish, meat, and cheese come from vendors in Nice passionate about their craft for generations. Prioritizing our local producers and working the product from its roots to create quality dishes.

An Evolving Menu

On the menu? A « blind » tasting menu changes with the seasons, taking the epicurean to places he never imagined going. Dive into the creative universe of Chef Aurélien Martin and shake up your insider habits!
« Ceviche of trout from Cians, green juice, creamy tahini and coconut, jalapeño, squash cream » « Reinterpreted Niçoise stew: venison, almond cauliflower puree, cranberry gel, open ravioli of venison stew » « Gratinated ginger sabayon made on the spot, roasted fig and fig leaf sorbet » … Bold, delicious dishes with careful and colorful presentations. The menu changes every two weeks: passionate about culinary innovations, the Chef indulges to satisfy his regular gourmands! And it’s a success!

In the dining room, Marie is an excellent maître d’. Her dynamism is attentive to every little detail. Her warm greeting and smile create a convivial and welcoming atmosphere.

Aurélien, what are your plans?

“To stay in shape and continue with the same energy! It’s been almost two years since our Menus have been offered and we have had good feedback! We are a great team, and my culinary imagination continues to grow! I’d also like to work more at the root of ingredients and develop their maturation for more taste, flavors, and authenticity.”

A story to share?

“A customer had tears in her eyes over an old dessert: the choco-tonka: a chocolate tonka cream with whipped cream, coffee ice cream, and a caramelized chocolate tile. Seeing so much satisfaction and emotion in this lady surprised, moved, and motivated me… because it’s also a unique moment that goes beyond the simple pleasure of eating.”
