The official start of the “Cuisine Nissarde” labeling operation was announced at the restaurant “Chez Acchiardo,” a well-known and respected establishment of Niรงoise cuisine, by the Nice Tourism and Congress Office and members of the label’s technical committee. Over 15 establishments will be visited before the end of the year.
On the table, everything is set, with a parade of Niรงoise specialties offered to the members of the technical committee accompanied by the Director of the Tourism Office, Denis Zanon: Panisses, pissaladiรจre, farcis, trouchia, daube… Enough to delight the judges who will have to decide in a few days whether or not to award the label to the establishment. “It’s very respectful of tradition, and you can see there’s special attention to how the recipes are made,” says Franck Bermond, a cooking teacher, President of the Cercle de la Capelina d’Or, and member of the label’s technical committee, convinced by the various creations presented.
But while what’s on the plate is important, there are other parameters for affixing the “Cuisine Nissarde” label to one’s signage. Indeed, hospitality, the arrangement of the restaurant, its kitchens, its knowledge of Niรงoise cuisine and heritage are all strengths that will allow a restaurant to earn the coveted label: “We were the first to respond to the request from the Tourist Office because our establishment was one of the first to be labeled at the time, and we hope to be once again today.” The Acchiardo family can sleep soundly judging by the rather delighted expressions of the technical committee members.
Many establishments (La Cantine de Lulu, A Buteghinna, L’Ecurie, L’Escalinada, Le Gaglio, Lou Balico, Luc Salsedo Restaurant, La Maison de Marie, Le Marchรฉ, Le Chat Gourmand, Neptune Plage, Le Safari, Le Sarao, La Socca d’or, Le Statu-Co, Brasserie de l’Union, and Lu Fran Calin) have already applied to try to obtain the label, and while for now only restaurants in Nice can apply, very soon other establishments in the Cรดte d’Azur region will also be able to do so: “Through this label, we wish to highlight one of the key values of Niรงoise heritage: its cuisine. By entering a labeled restaurant, customers will be assured of eating genuine Niรงoise cuisine in the best possible environment,” explains Denis Zanon, Director of the Nice Tourism Office.
