He is one of the 548 Michelin-starred chefs in France. His restaurants illuminate the Port of Nice neighborhood. Everything he undertakes is a success! And to complete this portrait, he is a generous, touching, and paternal man: Chef Samuel Victori.
Coming from a family of restaurateurs, Samuel earned a degree in economics to fulfill his parents’ wishes. But his deep-seated desire since childhood to become a chef caught up with him and led him to join the prestigious Institut Paul Bocuse! Between internships and the beginning of his career, he successfully joined the brigades of Chef Arnaud Donckele*** at La Voile d’Or Saint Tropez, Chef Michel Troisgros*** Maison Troisgros in Roanne, Chef Eric Fréchon*** at Le Bristol Paris, and Chef Shinichi Sato** at Passage 53 Paris. “My years of training and working with great chefs taught me culinary techniques and gestures, the taste for precision, the strength of passion, and respect for hierarchy. My position as sous-chef at Passage 53**, considered a “little house,” was a real revelation! There, I discovered the immense pleasure and motivation of working in a human-sized restaurant, with the hope, one day, of running my own restaurant where Michelin star excellence would shine… without a multi-million-euro budget!”
In 2018, the sunny land of the South and the Mediterranean Sea called him. He decided with his partner Juliette to open their first restaurant in Nice: Les Agitateurs. “Young, determined, and with little means, we settled our knives in the first available space! I was in the kitchen, doing the dishes… Juliette was handling service… The kitchen, tables, and tableware were far from flattering…” However, their cooking delighted and enchanted. Their work and passion were rewarded, and Les Agitateurs became a shining star in 2021! “We were very honored by the Michelin Guide. The setup was gradual, and today, I appreciate a beautiful functional oven, a well-designed bar, a lovely fork, and a united brigade (laughs)!”

Chef Samuel Victori expresses two essential values: seasonality and freedom! He emphasizes the importance of seasonal products, whether from the land or the sea, and creativity without conformity. “Nature sets the rhythm for my dishes. I love waiting for the arrival of peas, asparagus, sea bass, strawberries… I cook them freely, far from the codes of visual communication or current “trends”… even if they are out of step with their time!”
His inventive cuisine remains faithful to our beautiful French traditions, our childhood memories, or simply our favorite dishes! “I create a dish with a product I love, enhanced by an element of surprise: its sauce.” His plates are inspired by travels, unexpected encounters, meals prepared by Juliette, or even role-playing games with his brigade!

Nothing stops Samuel and Juliette, and nothing will stop gourmets from discovering them again and again!
