The bistro “L’Alchimie” in Nice, run by chef Arnaud Collin, offers generous and authentic bistronomic cuisine. With a menu that changes every week to provide homemade dishes inspired by the seasons.

Located in the heart of the Carré d’Or in Nice, the bistro “L’Alchimie” quickly established itself as a must-visit address for bistronomy enthusiasts. At the helm of the kitchen, chef Arnaud Collin brings his refined expertise, the result of several experiences with renowned names in gastronomy. Formerly a commis at the Pavillon Ledoyen under Christian Lesquer, then sous-chef for the prestigious caterers Potel-Chabot and Fauchon, Arnaud Collin also worked at the Blue Bay Monaco with Marcel Ravin. He offers generous cuisine, unpretentious, reflecting his journey and taste for authentic flavors.

The menu changes each week in harmony with the seasons. On the menu, three starters, three main courses, and three desserts all made in-house. Among the house creations, food lovers can enjoy “Fish lasagna with spinach and lobster bisque,” or “Sea bream accompanied by sweet potato in two textures.” The desserts revisit classic French desserts with a touch of modernity, like the “Pear almond tartlet” or “Crème brûlée with Madagascar vanilla.”

A warm experience

The warm setting of “L’Alchimie” is as appreciated as the cuisine. Romain, head of service, ensures a friendly experience in a cozy and minimalist atmosphere. “With Romain, on the first opening nights of L’Alchimie, we served two covers… we were walking around laughing… Today, the restaurant is full both at lunch and dinner,” recounts the chef, pleased with the restaurant’s rapid growth since its opening.

Six months later, the establishment received the Bib Gourmand distinction from the Michelin Guide. An honor that reflects the success of Arnaud Collin’s cuisine. Driven by a desire to please, he shares his philosophy: “A quality expertise, a dish that cannot be enjoyed at home, and simplicity… Today, I’m delighted when my customers are happy!”

But the chef does not intend to stop there. With his experience as a sous-chef with Parisian caterers, Arnaud Collin could see himself offering his services as a caterer.

Meanwhile, to enjoy authentic and refined cuisine, the meeting is set at 14 Rue Maccarani in Nice.
