In the Port district, Pistache’s display window instantly awakens the senses. Golden viennoiseries, refined pastries and generous sandwiches… irresistible sweet and savoury creations, artisan-made, seasonal and fairly priced.
A Trio Behind the Counter
One year ago, Marie, Franck and Jérémy — friends and business partners — embarked on this gourmet adventure, and the response has been overwhelming.

Marie, a pastry chef, elevates entremets with finesse and creativity.

Franck, a former finance professional who retrained as a baker and earned his CAP, is in charge of viennoiseries and focaccias.

Jérémy creates the sandwich recipes and welcomes customers with warmth, kindness and a smile.
A hardworking and passionate trio, recently rewarded with the Grand Prix Envi des Indépendants Niçois.

Pistache positions itself as a premium bakery-pâtisserie, celebrating the great classics of French gastronomy.
Viennoiseries:
Croissant, pain au chocolat, pain suisse, pistachio roll, and NY roll with white chocolate and pistachio.
Pastries:
Vanilla flan and pistachio flan, pistachio-raspberry tartlet, pistachio choux, chocolate praline finger…
Seasonal pastries:
Strawberry-basil tart, apricot-rosemary roll, rhubarb-hibiscus tart… simple creations with a distinctive twist.
Savoury Delights Too
At Pistache, indulgence also means authenticity and sharing, with gourmet sandwiches served on focaccia or brioche:

A soft, flavourful journey inspired by the Mediterranean.
All creations are made using fresh French products: flour and milk, seasonal fruit from local producers, Valrhona chocolate… The trio’s philosophy is uncompromising quality, with no artificial colourings or preservatives.
What I Loved

The comforting pain au chocolat, with its golden, thin and crisp laminated dough, airy crumb and a buttery, almost caramelised flavour, filled with a double bar of 55% cocoa chocolate.

Lightly sweetened pastries, elegant both visually and on the palate.

The lunch formula at just €14, including a gourmet sandwich, a pastry and a drink — excellent value for money.

The cosy, welcoming space that evokes a holiday feel and invites guests to enjoy their meal on site.
A Word with Franck
What do you want to pass on to your customers?
“Treating our customers with a range of homemade products that are honest, clear and made with passion and heart. Our recipes use high-quality ingredients — for example, in our pain suisse with pastry cream, we use real Madagascar vanilla beans and Valrhona dark chocolate chips. At Pistache, you can take away or enjoy your food on the spot in a warm, convivial space. Our open laboratory also allows for interaction and complete transparency in how we work.”
Your shop was forced to close for three months due to the risk of building collapse. What did you learn from that?
“The need to have cash reserves! (Laughs.) As entrepreneurs, we don’t have access to unemployment aid… Jérémy worked in the kitchen at the Méridien. Marie and I had an incredible and enriching experience working in the bakery-pastry department at the Hôtel du Couvent! We had the honour of working alongside Geffrey Marx, son of Thierry Marx. Today, we are more productive and, in hindsight, very happy with what we offer our customers.”
What are the future plans for Pistache?
“Staying true to our identity and continuing to create new products! We’re considering opening another shop and/or possibly moving to a larger location — while staying in the Port district… a neighbourhood we love and where we live.”
