A chat with Chefs Fred Grava and Guillaume Bousquet
Fred, tell us about your meeting and professional journey with Chef Glenn Vielโฆ What have you learned from this culinary genius?
“We met during a sports session in Courchevel. Right away, we developed friendly ties. Then one day, he offered me to work with him as a Sous-chef at the Kilimandjaro, where we obtained 2*. Following this experience, I joined him at LโOustau de Baumaniรจre to achieve 3*! My Chef taught and still teaches me today the discipline, attention to detail, and cuisine excellence… he trusted me, which allowed me to reveal, express, and improve myself, eventually becoming Executive Chef at Taulissa!
Guillaume, tell us about your journey. What does Glenn teach you in creating your sweets?
I started as a Sous-chef in the fine dining restaurants of Le Meurice 5* and Prince de Galles 5*. Thanks to these experiences where creativity and technical skills are required, I was able to obtain the position of Chef at Lasserre*, then at Le V 3*. Glenn teaches me another way of thinking, being, and acting… If I don’t create enough, I can quickly get bored… He brings me wisdom and the ability to discern what is useful and just.
Fred and Guillaume, what do you wish to convey in your dishes at Taulissa?
We are a united and creative brigade, the menu was developed with care and a clash of ideas! We offer authentic and modern cuisine where taste, seasoning, perfect cooking, and good garnish… clash, surprise, and are delightful at the same time. We revisit Mediterranean and Provenรงal classics by enhancing them with new flavor blends, textures, and visuals. Taulissa is a heartfelt cuisine where “one meets among friends” with friendly and relaxed service. We want to create an emotion and a lasting memory.”
