Steeve Bonnet, French and world champion, prepares gourmet pizzas with organic sourdough and local or Italian products. In Nice, his two pizzerias also offer pizza workshops, a catering range, and franchise projects.

For 10 years, Steeve has been delighting palates: Expertise, Creativity, and Product Quality to succeed! Our warm pizzaiolo offers his “signature” pizza dough: a sourdough made of organic flour, water, olive oil, and salt, subjected to a natural fermentation to ensure it rises. No chemicals are used, and 36 hours of work are required. “The sourdough develops a strong, generous flavor rich in aromas. The dough is lighter and more digestible than a traditional dough,” the chef explains. The dough becomes crispy and soft with a sweet hint of bitterness… Watch out for your taste buds!

Steeve favors the short supply chain for product selection: La Libération market, Niçoise butcher, and Italian artisans. “It’s a joy and priority to work with good and beautiful products, and to create quality and gourmet pizzas.”

On the menu? “Traditional” Pizzas: Reine, 4 cheeses, Cannibal, Vegetarian… and “Authentic” Pizzas: Freshness (burrata, cooked ham, parmesan, balsamic), Emilia (artichoke cream, mortadella, pistachio pesto), Truffle Lover (truffle cream, 18-month San Daniele, burrata and truffle shavings) … Also, each month, a pizza is offered with seasonal products (porcini cream, stracciatella, caramelized apple, culatello, sautéed porcini with garlic and parsley) … a wide choice to satisfy every desire.

Steeve, tell us about your journey…

“Graduated from business school, I was a salesperson for a major brand, but my mind was elsewhere. Son of a baker and passionate about pizza since childhood, I quickly ventured into the business. Training, repetitive hard work… I opened my 1st pizzeria “L’Authentique” at La Libération, and then, fueled by its success, the 2nd pizzeria in Fabron. I constantly train and compete to progress and develop pizza.”

In addition to your Signature Pizzas, what do you offer to stand out from other pizzerias in Nice?

“We conduct pizza workshops either at the pizzeria or outdoors: share a moment of conviviality and expertise, create unique recipes, and taste them! Also, we offer a catering range for all types of private events.”

What are your projects?

In the future, I’d like to open more pizzerias as franchises, and create a laboratory. Also, with great anticipation, I’ll be participating in the next world pizza competition in April 2025 in Parma!”
