For 10 years, Steeve has been devoted to delighting taste buds: Expertise, Creativity, and Product Quality are essential for success! Our warm-hearted pizzaiolo offers his “signature” pizza dough: a sourdough made with organic flour, water, olive oil, and salt, undergoing a natural fermentation to ensure it rises. No chemicals are used, and 36 hours of work is necessary. โ€œThe sourdough develops a strong, generous taste rich in aromas. The dough is lighter and more digestible than traditional dough,โ€ explains the chef. The dough becomes crispy and fluffy with a sweet-bitter taste… Watch out for your taste buds!

Steeve prioritizes the short supply chain for product selection: La Libรฉration market, Nice butchery, and Italian artisans. โ€œIt is a joy and a priority to work with good and beautiful products, and to create high-quality and gourmet pizzas.โ€

Steeve, tell us about your journeyโ€ฆ

โ€œGraduated from a business school, I was a salesperson for a big brand, but my mind was elsewhere. The son of a baker and passionate about pizza since childhood, I quickly embarked on the adventure. Training, repetitive and hard workโ€ฆ I opened my first pizzeria “Lโ€™Authentique” at La Libรฉration, then, riding on its success, the second pizzeria in Fabron. I constantly train and enter competitions to progress and evolve pizza.โ€

Apart from your Signature Pizzas, what do you offer to stand out from other pizzerias in Nice?

โ€œWe organize pizza workshops either at the pizzeria or externally: sharing a moment of conviviality and expertise, creating unique recipes and tasting them! We also offer a catering range for all types of private events.โ€

What are your projects?

In the future, I would like to open more franchised pizzerias, and create a laboratory. Moreover, with great anticipation, I will participate in the next world pizza competition in 2026!โ€
